I hope you all had the best st. patrick’s day.

I was just happy to have [J] home. its been three weeks. we’re still ‘settling’ into our new place. and have barely explored our new city. so time spent together was well overdue. we didn’t do anything too crazy, but loved every minute of it.

it went a little something like this ..

on saturday, we went downtown des moines; a little parade & green beer celebratin’.

I am loving tuesday nights. [pretty little liars + smash]. paired perfectly with comfy clothes, the fireplace lit, a glass of wine, & you have perrfection.

I am reading three books: {the happiness project}, {blog inc.}, and I only have a few pages left of {the night circus}. which I will be finishing today! my review will be posted tomorrow. [the next book club read will also be revealed].

I am adoring {the happiness project}. I’d give it to my happiest of friends. it’s an inspiring read.

ever since monday’s {chicken noodle + kale soup}, I am obsessing over the kitchen. so that’s where you’ll find me. concocting another recipe. to be shared soon.

next week is one of my favorite holidays – st. patrick’s day. the blog will be celebrating allllll week long. fun will be had, don’t miss it!

I have the best craft/painting project on my mind, but – I’m a tad frightened of putting it on canvas. I’m more of a pinterest failure than success. if/when I overcome my fear – I will share.

current obsession.

I believe I’m a little late to this party. but I’m here now.

current obsessionkale.

I’ve had it every single day, for the past seven days. [told you, obsessed]. I am almost certain you’ve heard the buzz about kale. it’s health benefits are through the roof, and reason enough to include it in your diet. but it’s also so versatile. I just started tossing it in all sorts of recipes. everything from scrambled eggs, to sandwiches, and a stir-fry.

my favorites.

kale saladthe easiest: simply mix fresh kale + your favorite salad ingredients [for me: onions, carrots, celery, & almonds] + oil & balsamic vinegar [or your preferred dressing]. toss & enjoy!

kale stir frykale is ahhh-mazing cooked.

cook in a skillet: kale + your choice of stir fry veggies [I used: onions, garlic, bell peppers, celery, & carrots] with olive & sesame oil. place over quinoa, rice, or enjoy solo. top with toasted sesame seeds!

chicken noodle soup with kalethere is nothing better than a great soup on a cold, winter night. or any night, for that matter. on monday I’ll be posting my recipe for: chicken noodle soup + kale.
