I’m excited to have kristin of {a slice of mudpie} here today. she’s sharing a fun & easy weeknight dinner recipe. especially for summer. or better, perfect for [J] & I’s camping excursion. we will absolutely be making one of these grilled pizzas for dinner! maybe even tonight, once we arrive in wyoming.


Hello LLinaBC readers!  My name is Kristin, and I blog over at A Slice of Mudpie. I write all about my adventures in parenting my little guy solo, and my attempts at being crafty.

When Chelsea asked me to guest post, I was really excited!  Out of all my bloggy friendships, she is someone I  knew BEFORE I started blogging.  We are actually 2nd cousins…or cousins once removed…or distant relatives…something like that.  I think my dad is her mom’s cousin?  You following all that?

Now that I am completely off topic, today I wanted to share a quick and fairly simple dinner that my son, HJ, and I made the other night.  Grilled pizza!

The first thing we did was turn the grill on to get it nice and hot (or as HJ said, warm and cozy), and sprayed it with some non-stick spray.  Then, I pulled out all the ingredients.

We decided to make our favorite, Hawaiian.  I bought a pre-made pizza crust to simplify the process, but if you want to be all fancy, you can make your own.  We use jarred pizza sauce (once again, we aren’t fancy and making homemade sauce), Canadian bacon , 1/4 red onion, 1/2 green pepper, pineapple (as much as you please) and mozzarella cheese!

I placed the crust on the grill for about 2 minutes before putting any toppings on.  The side that was facing down on the grill will be the top of the pizza (that way both sides get grilled, once the toppings are on, you can’t flip it over!).  After a few minutes, I brought the crust back into the kitchen to put all the toppings on.  I started by putting the sauce on (use to your liking), then layered it with Canadian Bacon, green pepper, onion and pineapple.

And finally, topped it with lots and lots of CHEESE!

We put it back on the grill for about 5 minutes (until the cheese was melted and crust looked a tad brown).

Then, I realized I don’t have a pizza pan, so I had to make do with a cutting board to bring it back inside.

HJ was really excited that he had helped make dinner and was ready to eat.

I love the flavor that the grill gives to the pizza and can’t wait to try it again.  Our next grilled pizza will be tomato, basil and fresh mozzarella!

and then there was friday afternoon ..when I tried to pitch a tent in our living room. fail. our apartment is not big enough, my tent-building skills are just fine.


you’d think that last clue really exposed the announcement. yes, we’re taking a trip. and we will be camping. but there’s more to it ..

inspired by a trip my parent’s took me on as a child. our need strong desire for a vacation. love of road trips. want to spend time together. and chance to see some of our country’s greatest sites.

we’ll be gone for 16 days!!!!

we’re hitting mount rushmore. little bighorn battlefield. the badlands. devils tower. yellowstone. salt lake city, UT. estes park & denver, CO. just to name a few. we will not be camping the entire time, only about half ..[that’s enough for me]. I haven’t been camping since age 10-ish. so [J] & I are in for an adventure.

in regards to the blog ..

my mom says camping is more ‘civilized’ these days, but I’m not convinced and/or taking any chances..so I’m leaving you in the hands of some of my favorite bloggers who will keep you entertained distracted while I’m gone. they’re amazing! and have some fun things up their sleeves. I do plan to write a couple posts ..most definitely “the week in photos” [on friday’s]. and probably a few others. basically, there will be a new post up each day. so you won’t even notice I’m gone!

besides the fact that we’ll be busy fighting off bears, scratching mosquito bites, and using a campfire as our oven ..[J] & I are making a conscious effort to disconnect. at least for the first 6 days of our trip, no social media. [I may sneak an instagram here & there].

I’ll have my camera with me at all times. and will recap the entire trip when we return.
